National Ice Cream Sandwich Day

August 2nd is National Ice Cream Sandwich Day. My favorite ice cream sandwich is the traditional long chocolate cake wafer with neapolitan ice cream. More popular these days are the cookie type of ice cream sandwiches. By using cookies the flavor combinations can be unlimited. I found a basic recipe for homemade cookie sandwiches at Nestle Chocolate Chip Cookie Ice Cream Sandwiches using packaged cookie dough, store bought ice cream and mini chocolate chips. Simple. With this recipe variety is endless. I am thinking about oatmeal chocolate chip cookies with butter pecan ice cream, or maybe a chocolate chocolate chip cookie with banana ice cream rolled in peanut butter chips (that's my Elvis special).

For those of you liking the more traditional ice cream sandwich there is a recipe that takes lots of the sandwiches, layer them with some whipped topping, hot fudge and nuts to make a spectacular ice cream treat. Real Mom Kitchen is featuring this very idea from a recipe she found from Quick Cooking magazine.
