National Spumoni Day

Spumoni. I do love Spumoni. It goes back to my Italian upbringing. For those not familiar with spumoni it is a triple flavor ice cream treat usually of chocolate, pistachio and cherry flavors with fruit and nut bits mixed in. It is rich and delicious. I found a recipe for the adventurous on browneyed baker. She makes a Spumoni Terrine. It looks incredible. She also has a recipe for the Cherry part of the ice cream as a simpler version. I might try to make this one. Enjoy Spumoni Day or at least have some Neapolitan ice cream. Mangia!
