Seeds of Change started in 1989 as an organic seed company for gardeners and farmers. They have since branched into producing organic foods. Thanks to Seeds of Change I was able to try three of their Microwave Rice products.
I really liked the ease of preparation of these rices. The entire pouch of rice goes in the microwave for 90 seconds and it is done. The rices come in 6 premium organic flavors. I tried the Tapovan White Basmati Rice, the Dharamsala Aromatic Indian Rice Blend and the Uyuni Quinoa & Whole Grain Brown Rice. The Tapovan White Basmati Rice is a plain rice mix perfect for a side dish or complimented with added sauces. It has a clean sweet flavor and a good bite to the texture. This rice would be very versatile in meals. The Uyuni Quinoa & Whole Grain Brown Rice was my favorite. I found this rice very well seasoned and earthy much like a wild rice. I enjoyed the Quinoa grain in this mix. I would buy this flavor in the future. The Dharamsala Aromatic Indian Rice Blend was very exotic in flavor. I enjoyed the texture of this mix but I was not fond of the spices. If you like Indian food you will enjoy this rice blend. The spices are a melange of Indian spices known as Bisibelebath. Okay... something new for me to learn about. The Mung beans and lentils added to this rice dish created an interesting flavor combination.

On the pages you also come across cooking tips with photos to help. The stories about the recipes are enjoyable to read. A lot of work went into this fabulous collection. It does contain photos of great quality in sections of the book. One of my most bookmarked sections (lots of sticky notes) is the Lunch Counter Specials. I grew up in a diner restaurant that my grandfather owned. A lot of the recipes in this section remind me of his diner. For anyone longing for classic recipes, old favorites and new recipes to try, The Cook's Country Cookbook is a must for your kitchen.

King Arthur White Whole Wheat Flour has all the fiber and nutrition of traditional whole wheat, with a milder flavor and lighter color. A tasty way to add whole grains to your diet.
Because of its lighter flavor and texture, you can substitute the White Whole Wheat Flour for the all-purpose flour in your baked goods. On the King Arthur Flour website there are many recipes to make with the White Whole Wheat Flour. I decided to try a recipe I have always wanted to make - Biscotti. I found a simple recipe on Nancys Kitchen for Coconut Biscotti. I used the White Whole Wheat flour for all the flour required in the recipe. They turned out fantastic! I never realized Biscotti was so easy to make. The flavor was delicious and not grainy like some whole wheat flours can be. I like knowing it has the added fiber and grains. I will be searching for more recipes to make with the White Whole Wheat Flour.
If you have not tried King Arthur Flours I highly recommend them. The website is filled with baking information and wonderful products. I even found the flour for sale at my local Albertsons grocery. Carrot Cake tastes just like a rich delicious slice of carrot cake. Very pleasing. It is creamy, with pecans and loaded with carrot flavor. The white chocolate topping mimics the cake frosting. Scrumptious.

How does it taste? I am doing the happy chocolate dance here. I was able to sample Hershey's Extra Dark in 3 different flavors. Pure Dark Chocolate is rich, dark and creamy with a long lasting chocolate flavor that lingers. The Pure Dark Chocolate with Pomegranate flavored pieces is the same delicious dark chocolate with little bits of fruity nuggets. I found this chocolate very berry-like in flavor. I am fond of raspberry with dark chocolate and this tastes very similar. Fruity deliciousness! The Pure Dark Chocolate with Cranberries, Blueberries and Almond pieces is delightful. These were delicate in blueberry flavor with the tartness of cranberries and the crunch of the almonds. This is truly a treat. I am still doing the happy chocolate dance. The key to making this a healthy treat is moderation (although I could eat the whole bag). Just knowing I can actually have a piece of chocolate, every once in a while, that is good for me makes it a chocoholics dream.

Where were you?
I was in Oklahoma just getting to work. My boss was watching the TV and I had no idea what was going on. I came to see the images on the screen. I grew up back east and had visited the Towers when I was little. My family moved to California but still has family in the New York Area. I quickly called my mom in California and she was already crying. My grandmother lived across the Hudson with a view of the New York Skyline. She had passed away before the incident and my mom was glad she did not have to see it. It would have devastated her. She always loved New York. I sat in silent shock all day watching the events unfold. The first hit I thought could have been an awful airplane accident but the second hit proved otherwise. My heart sank. We had no business that day and my boss closed up so we could go home to be with our families, hug each other and cry.

I find the prices at Thomas & Wilson's Gourmet popcorn are very reasonable for a high quality caramel corn. They also offer Cheese popcorn and Caramel Nut popcorn. Starting at 1 lb. for $1.70 up to 2 lbs. for $29.00 with sizes inbetween. They also offer catering party specials with a variety of popcorn flavors. That is a great idea! Thanks to Thomas & Wilson's I was able to sample the caramel popcorn. It is very delicious. It has a buttery caramel flavor and just the right amount of sweetness. It was crunchy and not stuck together. I was very pleased with the caramel popcorn.

I received a flavor assortment from Mia Mallows to sample for this review. My first impression is they are beautiful. The colors of the marshmallows are so vivid and bright. They are good size EXTRA LARGE 1 1/2 inch Cubes of marshmallow goodness. My favorite color is the blueberry. These are truly pretty.
The flavor is incredibly delicious. The texture of a fresh marshmallow is softer and lighter than a commercially made marshmallow. Mia Mallows melt in your mouth. She makes so many yummy flavors. My assortment included lime, banana, lemon, chocolate, blueberry, orange, coffee, strawberry and Dulce De Leche. These are so good. I tried the strawberry first and it was a good choice. The strawberry flavor was intense and delightful to eat. The color was a stunning pink. Very appealing. Next I tried the coffee, it was like a cup of coffee. Rich and delightful. I loved the banana. What a tropical treat. Full of banana flavor. My favorite of all the flavors I tasted is the Dulce de Leche. It was creamy, with a rich caramel flavor. It was wonderful eaten by itself but I could picture these beauties melting in a rich hot chocolate for a caramel treat. All of Mia Mallows are fantastic. The big thick pieces of marshmallow are just right. The colors are so pretty they would make fun eats for bridal showers or baby showers. You could match color themes.

Singing Dog Vanilla and Red Ape Cinnamon Review

What is vanilla bean paste? It is a vanilla extract with vanilla beans in it. It is a thicker syrup more than a paste. You can see the flecks of vanilla bean in the paste. Use vanilla bean paste in place of vanilla extract in something you want to feature the specks of vanilla bean. I used my Singing Dog Vanilla Bean Paste and Red Ape Cinnamon to make a rice pudding. It was easy to measure the Vanilla Bean paste and mix into the ingredients. It looks rich with all the bean flecks. The flavor seemed more intense than vanilla extract so I did adjust the amount using slightly less than I would extract. I loved seeing the bean specks in the rice pudding. I then made an apple topping again with both the Vanilla bean Paste and the Red Ape Cinnamon. Both turned out scrumptious.

The Red Ape Cinnamon is pure ground organic cassia cinnamon from Sumatra. It is fragrant, sweet and robust. It was not too strong or bitter as some cinnamons can be. The Red Ape correlation: 5% of all profits are donated to organizations the protect orangutan habitat. This is excellent cinnamon. It was not overpowering, it was more enhancing in my baking. It brought a delicate cinnamon flavor to my pudding and apple topping. Combined with the Vanilla Bean Paste, the Red Ape Cinnamon are my go to spices this holiday baking season.

Simply Salads Cookbook Review

It has been very hot in my area for the last couple of weeks. Too hot to cook. We have been making a lot of salads to beat the heat. I recently received a wonderful cookbook: Simply Salads by Jennifer Chandler. This book is a delight. There are more than 100 delicious recipes. These are simple to make recipes using prepackaged greens and a few easy to find ingredients.
Jennifer Chandler has a lovely website called Cook With Jennifer. Jennifer has been in the food industry for the past 15 years. She has been a chef, market and restaurant owner and is currently a food writer. Simply Salads is her first cookbook.
I enjoyed browsing through the book while trying to decide on which salad creation to make. There is a photo for every recipe. Tantalizing delicious looking photos. The book is categorized by ingredient type. Greens, poultry, meat, seafood, fruit, etc. With each salad recipe is the suggested dressing. Many of the dressing recipes are on the same page as the salad. Great idea! It makes it convenient to make the salad and dressing without having to turn pages. There are so many wonderful salad ideas in this cookbook. Here is a sampling of the book recipes from Cook with Jennifer: Margarita Chicken Salad and Confetti Chip Salad. Looks delicious.
I chose 2 different salads to make. First I decided to try a slaw. I made Honey-Lime Corn Slaw. The ingredients included fresh ears of corn, packaged Cole slaw mix, red bell pepper, scallions and cilantro. Simple. What made it spectacular was the dressing. Honey-Lime vinaigrette. Yes it is as good as it sounds. Fresh lime juice, honey, extra-virgin olive oil with salt and pepper to taste. Easy to make. The flavor of the slaw is incredible. This will be a family favorite recipe. I was explaining how good it turned out to my mother and she has already requested I make it for our next family get together.
Next I made the Curried Rice and Chickpea Salad. This salad is a perfect side dish salad. Again simple ingredients, brown rice, chickpeas (garbanzos), shredded lettuce, red bell pepper and slivered toasted almonds. The dressing is fantastic. Orange juice, white wine vinegar, extra virgin olive oil and curry powder. Lots of flavor to this salad. I would serve this as an accompaniment to a meal.

Blueberries are very good for you. Today is National Blueberry Popsicle Day. Sounds like a delicious way to beat this heat. I found a few recipes to make blueberry popsicles. Kitchen Witch Steph has a recipe on recipezaar for a popsicle made with fresh blueberries, milk and yogurt. Sounds cool and creamy. The Thrifty Gourmet has a Peach Blueberry Yogurt popsicle using fresh peaches with the fresh blueberries. Scrumptious. For a more adult popsicle recipe, Food & Wine is featuring a Blueberry Peach Tequila Popsicle. Oh my. Made with fresh peaches, blueberries and tequila. Not for the kids. These recipes take advantage of the delicious fresh blueberries in season. Make a frozen treat and enjoy the day!

Gummy candy is very popular these days. From gummy bears to gummy worms in sweet or sour flavors, you can find all types of gummy candy. Here is a candy you can feel good about. Surf Sweets are candies made with Organic fruit juice and sweeteners. They are made from natural colors and flavors. They are also made without corn syrup which is a big topic of food conversation lately. Surf Sweets provides 100% of daily Vitamin C.
