The Vegetarian Option Cookbook - Giveaway

Eating healthier these past few months has brought vegetables to a whole new light for me. I am trying to make more gourmet type vegetable dishes to pizazz them up a bit. I can't say I would ever be a full vegetarian but I do admire the amazing tastes Chefs are able to create. The Vegetarian Option is filled with mouth watering recipes without meat or fish.


The celebrated British Chef, Simon Hopkinson, brings out the best in vegetables by pairing incredible ingredients. Chilies and avocados, ginger and scallions, tomatoes and olive oil to name a few. The photos in The Vegetarian Option are gorgeous. The photographer, Jason Lowe, brings the richness of the dishes to life so much so, you can almost smell the goodness. The dishes created by Chef Simon range from simple to complex but are still easy enough for the average home cook to make. He certainly knows how to make vegetables decadent.

A few of the decadent recipes are:
Asparagus Frittata with soft cheese & chives
Broccoli with chopped egg & sherry bread crumbs
Baked butternut squash with olive oil & lemon
Carrot salad with cilantro & green chili

There are many delectable recipes to make in The Vegetarian Option. You will find salads, main dishes, side dishes and desserts all based on combinations of ingredients that pair well together. I liked the format. I enjoyed the photos and each recipe sounds incredible. I made the Cucumber, Melon & Tomato salad found on page 84. It was light, flavorful and perfect for a summer get together.

    My daughter eats mostly veggies with a little fish/shrimp. Luv to get this so I can make more veggie recipes.
    I'd like more recipes for zucchini that I can freeze cause when that crop comes in I usually end up giving lots away. thanks

    I love cauliflower. As a youngster, I had the idea that I didn't like cauliflower, but when I was taking cooking in high school, our group cooked cauliflower and we were required to eat what we cooked. I loved it and have loved it ever since. My husband has been dianosed as diabetic and I now would love some diabetic recipes for many things.

    I'm not much of a vegetable person, but my husband is now a vegetarian so I need to learn how to cook for him. Mealtime has become VERY challenging in my house. My favorite vegetable recipe though is roasted brocolli. Yum!
