Fifty years ago an amazing cook book hit the market. The I Hate To Cook Book by Peg Bracken. This was a revelation in cooking. For those women who liked to cook - this was not for them. I Hate To Cook Book was for the those that hated to cook, but had to! Sharing secrets and tips to get us in and out of the kitchen and make something taste good was a dream.

Consider the time of the original release, 1960. That first edition of Peg's adorable well loved book has since become a collector's item. You can find copies selling for quite a penny on eBay. If you are lucky enough to find one at a thrift shop or a yard sale, snatch it up! I have an original copy of the first release. It is one of my favorite collectible cookbooks. I love the simple recipes and the very cute illustrations. I really think the cook in the drawings is sulking! The I Hate To Cook Book quickly became a staple in a learning kitchen because of the tips, the 180 quick and easy recipes, and helpful advice for kitchen situations. The recipes are amazing and Peg Bracken wrote with a lot of humor.

Bring us to today - it is the 50th Anniversary of the original release of The I Hate To Cook Book. Since the original release, over 3 million copies have been sold in various printings throughout the years. Quite a feat for a simple easy to follow cookbook. Now a whole new generation of cooks are discovering the fun and easy cooking filled with the delightful humor of Peg Bracken. This revised and update version introduces us again to the tasty recipes devised to get us out of the kitchen quickly. Peg always understood we rather be doing something else than cook! I love how The I Hate To Cook Book has been updated for the items in our shelves today. I thoroughly enjoyed the very touching forward from none other than Peg's daughter - Jo.

    What my husband and I do is either have scrambled eggs or we have grilled cheese sandwiches. We will also cut up a tomato and some fruit and that will be the dessert and salad.

    I make tatertot caserole... its simple and filling and everyone loves it! It's just groundbeef mixed with cream of mushroom soup (bottom), tatertots (middle) and shredded cheese on the top, takes maybe 20 minutes total!

    I really hate to cook and can be quite terrible at it most of the time. My throw together dish is cutting up rustic red potatoes(quarted), brushing some grapeseed oil over them, sprinkling some itailian herb seasoning, then pop it in the oven for 45-50 minutes. I usually sprinkle shredded cheese over it when it's done. Fairly low effort yeilding pretty good results.

    We always keep frozen meatballs on hand. On busy nights, we heat them up , add canned spaghetti sauce and cheese and serve it on hoagies. Meatball subs are so easy and fast.

    simple meal I throw together is pasta with a marinara sauce. I use whatever pasta I have, a jar of marinara, if I have ground beef I'll add that to the sauce. It's quick and simple and everybody loves it.

    Omelets are my go to meal...I lay out all the leftovers on the counter and everyone gets to pick what they want in there special omelet.
    I keep the oven on 250 to keep them warm so we can all still eat together. Every one gets a special dinner and I get to clean out the fridge!!!

    We put cheesy sausage in the crock pot when we hate to cook. cheesy sausage, canned potatos and canned tomatoes. 5 minutes and it's in the oven. Easy peasy.
