I must admit looking at Tosca Reno, I am a little intimidated. She is so fit, I could never imagine getting to her fitness level. In reading her story, she started out some 200+ pounds with baby steps in the gym. Her time went from a mere 30 minutes total on a low speed setting on the treadmill and gradually increased as she felt her body begin its transformation to fitness. Her advice - Lace up the gym shoes and treat the gym as a sanctuary instead of punishment. Empower yourself to make the change. Part one of Your Best Body Now is filled with motivation to get us going!
Part 2 details the diet, the fitness, the health and beauty aspects of the program. I am in trouble here. The first part of the diet - eliminate sweets. Seriously, have you seen all the baking I have been doing lately? Chocolate? I would really have to dig deep in willpower to tackle the first task. But that is okay, Tosca's philosophy is start small with one change. Okay maybe sweets will have to taper off slowly but I can change something else like no more fancy coffee drinks. That would be a change. I really am excited to explore the principles of the Eat-Clean diet more in detail. I would like to see my hubby getting better nutrition too.

Garden Spring Rolls and Dipping Sauce
by Tosca Reno with Stacy Baker,
Authors of Your Best Body Now: Look and Feel Fabulous at Any Age the Eat-Clean Way
PREP TIME: 30 MINUTES YIELD: 5 SERVINGS
SPRING ROLL INGREDIENTS
2 packages rice-paper spring roll wrappers (20 wrappers)
1 cup grated carrot
¼ cup bean sprouts
1 cucumber, julienned
1 red bell pepper, stem and seeds removed, julienned
4 green onions finely chopped, use only the green part
DIRECTIONS
1. Soak one rice-paper wrapper in a large bowl of hot water until softened.
2. Place a pinch each of carrots, sprouts, cucumber, bell pepper and green onion on the wrapper toward the bottom third of the rice paper.
3. Fold ends in and roll tightly to enclose filling.
4. Repeat with remaining wrappers. Chill before serving.
DIPPING SAUCE INGREDIENTS
1 clove garlic
2 medium carrots, chopped
2 tablespoons coarsely grated peeled fresh ginger
¼ cup rice wine vinegar (nor seasoned)
2 tablespoons low-sodium soy sauce
¼ teaspoon toasted sesame oil
Pinch each of coarse salt and freshly ground black pepper
½ teaspoon red pepper flakes
3 tablespoons vegetable oil
3 tablespoons water
DIRECTIONS
1. Combine garlic, carrot, ginger, vinegar, soy sauce, sesame oil, salt and both types of pepper in a food processor and blend until smooth.
2. With machine running, add vegetable oil and then water through the feed tube in a slow, steady stream.
3. Chill and serve sauce with spring rolls.
TIP: Rice paper is tricky to work with, but remember if it rips you can often enclose the tear. Keep trying! The dipping sauce is fabulous with almost anything. I like to use it as a refreshing alternative to hummus.

I was working towards getting into shape at the beginning of the year and well in mid June I had a set back that lasted until just a few weeks ago. I was able to get my health club membership extended because the reason I didn't do much in the way of getting in shape was all health related (Three surgeries in the summer). Now I want to get back to the path that I was on prior to the set back.

I stay in shape so that I don't have to go and buy new clothes...because I HATE trying on clothes :) That's motivation enough.

My boys motivate me. I am 42 years old with a 6 year old & 3 year old. They are very active boys. I had let myself go over the years & this year I have dropped 40 lbs. I still have a long way to go, but knowing that I will be able to spend more & better time with my boys makes me want to get in better shape faster.
