Progresso Lemon Pepper Panko and Autographed Cookbook

Panko bread crumbs are all the rage in cooking lately. I have heard about them on many cooking shows. I have never had the chance to try them, until now. I recently made a delicious dinner using Progresso Lemon Pepper Panko.

What is Panko you might ask? Panko is made from the soft, tender centers of the bread. They are larger, flaky and coarser in texture making for a delicious lighter crunchier coating. Chef Michael Chiarello loves using panko in his recipes. Chef Chiarello is currently sharing his cooking expertise about panko with cooks like you and I. Using panko in recipes such as Crispy Seafood Salad, Mama Chiarello's Stuffed Eggplant and Turkey Scallopini and Squash Ravioli with Cranberry Brown Butter. Doesn't that sound scrumptious?

Courtesy of Progresso through My Blog Spark, I had the pleasure of tasting the Progresso Lemon Pepper Panko. I knew I wanted to bring out the best in fish with the lemon flavoring. Off to the local fish market, I purchased a very fresh catfish fillet. Following the coating directions on the package, I coated my fillet pieces perfectly. It was so easy. A little oil in the pan then 6 minutes cooking time...mmmm this was the best fish I ever cooked. Seriously, I really do not like to cook fish. I usually only eat it if someone else makes it. This catfish turned out so light and crispy, full of lemon flavor. The pepper added just the right amount of zing to the taste. It was so good, I have had family requests to make it again.
