It is no secret I am a big chocolate fanatic. Chocolate is my weakness and my biggest craving. One of my favorite chocolate treats is fudge. I have been in chocolate bliss with sampling a wonderful gourmet fudge. Let me introduce you to Bella's Confections Gourmet Fudge.

I knew I was in for something really special. Eric of Bella's Confections was so kind in sending me a lovely selection to sample. My gourmet fudge is from The Modern Collection. The fudge is presented in exquisite white tins with a peek through lid so you can see the decadence inside. The tins hold a generous 10 ounces of fudge and it comes packaged with a little serving knife, nice touch. My first flavor taste was the Dark Plain Chocolate Gourmet Fudge. Rich chocolate, plain and simple. The fudge is so creamy and the perfect consistency for my liking. The chocolate is silky with a wonderful lingering chocolate taste. It melts so nicely you want to savor each bite, and I did. The balance of creaminess with the decadent dark chocolate, oh yes I was in chocolate blissdom. Then I tried the Dark Chocolate Walnut Gourmet Fudge. The wonderful addition of sweet walnuts to the already perfect Dark Chocolate Fudge, could it get any better? Well yes I could have more! Bella's Confections really knows fudge. The quality is evident when you taste it. I would love to try some of the other decadent flavors - Vanilla Caramel Pecan is calling my name. Seasonal flavors too when available, I must try the Pumpkin Pecan Spice. I think I need a Bella's Confections frequent buyers card. For even more fun I was able to try the Bella's Bites. Bella’s bites are individual servings of semi-sweet gourmet fudge, just right for a little treat anytime. These little fudge gems come in packages of six in a variety of assorted flavors. Amor y Tacos - Celebrate Cinco De Mayo!

Cindo De Mayo is next Wednesday. May 5th. Here in California it is a big reason to celebrate and feast on fabulous Mexican food. Parties all over, tacos, margaritas, it is one big happy fiesta!

If you like Mexican cuisine especially tacos here is a great new cookbook.
Amor y Tacos: Modern Mexican Tacos, Margaritas and Antojitos written by Deborah Schneider. The author is a chef and author of the award-winning Baja! Cooking on the Edge (Rodale) and Cooking with the Seasons (STC), nominated for a 2009 James Beard Award. She is the executive chef and partner in SOL Cocina in Newport Beach, California. Schneider lives with her family in San Diego.

I will have to make a visit to the SOL Cocina restaurant sometime. The menu looks fabulous. It is not too far from my location and it would be a nice day out. It is easy to see the inspiration for Amor y Tacos.

Chef Deborah kept seeing a new direction with classic Mexican foods and worked her magic into new modern flavors. Antojitos (little bites) are becoming very popular for teasing the palate. Cocktails are expanding into new exotic ingredients and flavor sensations. Amor y Tacos brings a little of this Mexican Cuisine explosion to the home cook.

I love the party ideas presented. Amor y Tacos includes awesome suggestions for different size parties. I found this very handy. Browsing the cocktails I found something very different. How about a Tangerine Ginger Margarita made with fresh ginger? If you are more adventurous you could dare to try the Pineapple Serrano Margarita, I will bet that is one spicy drink. I plan on making the Iced Mexican Coffee for myself. I love coffee drinks. Moving on to the antojitos - here you will find lots of spicy flavorful bites. These are sure to please and tickle your tastebuds. The cookbook really shines when you get to the Tacos.

Shrimp Taco Dorado

Makes 12 substantial tacos, enough for 6 hungry people. The dorado taco is a supertaco—a new trend in which the basic taco is elaborated upon by adding more salsas, cheese, and garnishes; adding layers; toasting and frying; and generally pushing the taco to its limit. A good dorado is gooey, substantial, and filling—a corn tortilla fried on the griddle with a little butter or oil until golden and half crisped, then stuffed with cheese and any number of fillings and sauces.

This taco, a favorite of mine, tops melted cheese with garlicky shrimp, guacamole, and chipotle salsa, then finishes with a spoonful of sweet-hot mango habanero salsa and fresh cilantro sprigs. It all comes together quickly, so make sure everything is ready to serve before you start cooking the shrimp.

Ingredients

1 tablespoon plus 2 teaspoons butter or olive oil
1 teaspoon chopped garlic
1 pound medium shrimp, peeled, tails removed, and cut in half if large
1 teaspoon finely chopped chipotles in adobo
1⁄4 teaspoon salt
Large corn tortillas
11⁄2 cups grated Jack cheese
Chipotle salsa (page 138)
Guacamole (page 77)
Mango habanero salsa (page 136)
Cilantro sprigs

1. In an 8-inch sauté pan, melt 1 tablespoon of the butter or oil over medium heat.
When it is heated, but not brown, add the garlic and shrimp, and cook, stirring, until the shrimp are pink. Stir in the chipotles and salt and remove from the heat.

2. Preheat a heavy pan or griddle over medium heat and brush it lightly with some of the remaining butter or olive oil. Set a corn tortilla on the griddle and scatter 2 tablespoons of shredded Jack cheese evenly over the tortilla. Set 3 or 4 shrimp on one side of the tortilla. When the cheese starts to melt, fold the tortilla in half over the shrimp, and continue to cook on both sides until the cheese is melted and the tortilla is lightly crisped and golden brown.

3. Open the taco. Dollop 1 teaspoon of chipotle salsa on top of the shrimp and follow with a tablespoon each of guacamole and mango habanero salsa. Tuck a couple of cilantro sprigs into the opening and serve right away.

There are many incredible taco recipes to explore and make. I have added all the ingredients for Carne Asasa Taco Vampiro to my shopping list for my Cinco De Mayo dinner. With so many fantastic recipes to choose from you may wish every day was Cinco De Mayo.

Today is National Shrimp Scampi Day!
My mom makes the best shrimp scampi. I have had it at restaurants and I always prefer my moms style. She makes it so simple with butter, olive oil and chopped garlic and a few other specila touches. Served over pasta and mmmm what a meal. I have not had this in quite some time. I am sure mom would make some if I asked. Mom?

Most of the recipes I was searching for were pretty similar in style. The best resource I found was cdkitchen. She has listed 25 different Shrimp Scampi recipes for various tastes.

Take it all off Thursday! - Nutrisystem Update

Boy was I hungry this week. I have no idea why, but as soon as I would finish a meal I was wanting more. The weird part is I was craving salt too. Something sparked up my appetite and it was a struggle to stay focused on the Nutrisystem plan. I did manage very well somehow and I lost ...(drumroll please) 1.2 pounds this week! I am at a total loss of nearly 14 pounds. 13.7 to be exact with the Nutrisystem program.

So how did I manage with my appetite going through the roof this week. Veggies. Lots of Veggies. I browsed my meal planner to find all the unlimited veggies allowed on the program and ate those to fill me up. Veggies are a must on the Nutrisystem plan. They give you nutrients, fiber and fill you up. There are many you can have in unlimited amounts. Good veggies too. Asparagus, broccoli, cabbage, celery, cucumbers and more than 20 others. Cucumbers were my go to veggie this week. Luckily they were on sale at my local markets and they were so sweet this time of year. I heard that celery is actually a negative calorie food because it takes more calories in energy to eat it than it has. (could be a myth but hey its unlimited so I ate lots of it). One veggie that surprises me is carrots. Your serving size is only 1 cup. Must be the sugar content or something.
Thank goodness for veggies.

Today is National Blueberry Pie Day!

A few years back I read a book called American Pie: Slices of Life (and Pie) from America's Back Roads. It is a journey book of a writer that ventured by car across the country in search of the perfect pie along the way. I remember after reading about all the wonderful pies across the country I was on a big fruit pie eating mission. I could not get enough pie, and still love it. I am happy to say today is National Blueberry Pie day! Who can resist the decadent dark juices of a fresh baked, blueberry pie wrapped in a flaky crust with a dollop of fresh whipped cream? Mmmm.

Recipes for the day:

Oh Hubby is drooling over this one. He makes a scrumptious Prime Rib that has been requested by many friends and family members. He is the beef cooking master in our home. Today is National Prime Rib Day!

Prime Rib... Mmmm there are many way to season Prime Rib and I have found a nice assortment for you to lick your lips over.

The Food Network has a fabulous Bobby Flay recipe which includes fresh thyme leaves for the au jus.

Kitchen Worthy has a Wasabu-garlic crusted Prime Rib. Wow you would not need horseradish with this one.

Sticky Gooey Creamy Chewy is featuring a Rib Eye Steaks with a Spicy, Smoky, Cacao Nibs Rub. (which I included because of the uniqueness.)

Joelen's Culinary Adventures - Makes a Prime Rib Sliders Sandwich with leftover prime rib. Wait, who has leftover prime rib?

Either You're In or You're In the Way

The Millers Brothers lived this motto to the fullest. Either You're In or You're In the Way makes a bold statement of the determination of Logan and Noah Miller on their quest to make an independent movie. The premise of the movie Touching Home is a story about their father. He was homeless and died alone in a jail cell. Logan and Noah Miller became determined to share their love for their father by telling his story in a film.

Either You're In or You're In the Way - a book written by Logan and Noah Miller, details a year long journey into the insides, outsides and upside downs of the movie making process. The Miller brothers - two identical twin brothers set foot in Hollywood with a dream and no money. What happens is nothing short of "someone is watching over us" moments. Each episode of the adventure is written with such warmth, humor and detail.

I truly have enjoyed reading Either You're In or You're In the Way. I could not wait to see what happened next. Every moment leads to another moment. My impression is the Miller Brothers were in the right place at the right time with some divine intervention thrown in. Each chapter is thoroughly described in exacting detail to the places and events plus the outcomes. Imagine wanting to cast the actor Ed Harris in your movie...how would they meet him? They had a plan, to meet him at a conference where he was speaking. No agents, no Hollywood smoozing. Plain and simple, just approach him with the idea. You know what? It worked for them. Most all of their ideas were born of simplicity and perfect timing. Even the problems that developed along the way seemed to miraculously take care of themselves in one form or another. I thoroughly enjoyed reading about the year long ride, the struggles and the triumphs. As Logan and Noah have always said - Either You're In or You're In the Way.



The movie Touching Home is scheduled to be released at selected theaters starting April 30th. For more information about the movie visit the Touching Home website. Look for showtimes in your area.

Today is National Pretzel Day!

Here is a twisty tasty day! Today is National Pretzel Day! Did you know?.. that pretzels date back to the 1600's when monks took dough and twisted it to look like childs hands in prayer. Interesting. Pretzels can take on many shapes, the classic twist, sticks, rods and more elaborate shapes of custom designed pretzels.

I like soft pretzels with just a little salt dipped in mustard. Yum.

I found an incredible assortment of pretzel recipes by searching foodgawker. They photos all made my mouth water.

Jamie Cooks It Up has a fabulous yeast pretzel recipe.

Blue Ridge Baker has made an incredible Mexican Hot Chocolate Pretzel. Now that is different.

Little Corner of Mine makes a pretzel recipe with different ingredients for a choice of flavored pretzels. Yum.

The Decorated Cookie - made the cutest pretzel cookies with a special cookie cutter shaped like a pretzel. You know I had to include something sweet.

Today is National Pigs in a Blanket Day!

Today is National Pigs in a Blanket Day! Yum! We have made these many times in my family. We use regular refrigerated pop open biscuits and wrap the hot dogs. Bake in the oven and eat! Simple and oh so tasty.

I personally like the pancake type pigs in a blanket with the sausage in the middle. Oooh I will have to make those soon.

Dear So and So....


Okay another week of craziness has ended. Here are my letters I would like to send.

Dear Walmart Credit card shopper,
I was right behind you in line when you attempted to use your Walmart Credit Card. It did not go through. So you tried it again. Still nothing. Then you handed it to the cashier to try. Nope. She was explaining to you that the card was not going through and you need to call the number on the back of the card. She asked if you would like to pay another way and you said all you had was that card. At this time the cashier suggested I step to another register but oh no, I thought to myself, this is going to be good, so I stayed there and watched as you tried the card again. It's a miracle... oh wait, nope still not going through. What made the whole experience amazing is what you did next. You told the cashier you would take your groceries home and come back with the money! All I could think was, I will gladly pay you Tuesday for a hamburger today! Good luck with that one.

Dear Ducks,
I know our swimming pool is a rock style pool with a lagoon feel to it but.. it is not a lake. My dog was barking at the back door at you. We could not believe it when there you were a brown duck standing on one of the rocks. We let the dog out to chase you away. That is when we saw the second duck. You guys were swimming in our pool. Notice now there are two beach balls that are actively providing duck motion deterent. I feed you all the time at the park, how did you find my house for more bread?

Today is National Cherry Cheesecake Day!

Today features two of my favorite indulgent foods. Cheesecake and Cherries. I can't wait for the summer cherries to become available. Cheesecake is one dessert my hubby will actually eat. He is not much of a sweet eater but loves anything cheesecake.

I found some very delectable recipes for the day!

Take It All Off Thursday! - Nutrisystem Update.

I am finishing my 8th week of Nutrisystem. I feel I have done pretty well staying motivated to follow the program. I enjoy the foods, the structure and the results. This week I saw a 1 pound weight loss! Woo Hoo! I am officially at a 12 and 1/2 pound loss! I am so thrilled. My clothes are starting to be pretty loose. I am looking forward to a new summer wardrobe this year. Hubby get those credit cards ready!

It was a little tough for me this week only because I am waiting for my delivery to arrive and all that was left for foods were my "if I have to" choices. None of them are bad, they actually taste good but I like the other foods first. I was hitting the brick wall about what I wanted to eat this week. I tried mixing it up a little and eating lunch for dinner, breakfast for lunch and sometimes only a salad for dinner. It was okay and it made me feel I was getting more variety.

When you order your Nutrisystem food plan here is what you will receive:

Nutrisystem has been wonderful for me. I am thrilled with the good pace for safe weight loss. I am also rather enjoying vegetables more than ever. Jelly Beans are not just for Easter anymore. They are a year round treat. Today is National Jelly Bean Day! Thanks to the folks at Jelly Belly, jelly beans come in all sorts of fantastic flavors. They have become a sweet, pop in your mouth anytime treat. Some people even crave the fancy flavored jelly beans. Jelly Beans are a fun idea and an inspiration for some cute recipes I found.

At Culinary Concoctions By Peabody - She made cupcakes that look like corn on the cob with you guessed it, yellow and white colored jelly beans. So cute.

From The Decorated Cookie comes a recipe for mini jelly bean shaped cookies. She put a lot of work in the colors too. I could eat a handful of these cute little cookies.

At About dot com - I found this fudge recipe for Jelly Bean Fudge made with white chocolate and jelly beans. It sure looks colorful.

Of course you can mix and match your Jelly Belly Flavors to create new flavor sensations. Jelly Belly has a full flavor recipe list for fun.

Look Mom, It's Handmade - Nature's Charms Giveaway


Today's lovely artist for the Look Mom - It's Handmade event is Nature's Charms. The beautiful artwork created by Amanda is delicately brought to life on fabulous bookmarks, and prints. Amanda is a very talented artist.

Her profile:
I'm a self-taught artist who tried a bit of art school and decided it wasn't to my liking. I wanted to do my own thing! My first love is painting scenes from nature, but I also love working with my hands to create little treasures.

I felt calm while looking at Nature's Charms designs. She likes to use watercolor, acrylic as well as pen and ink. I could get lost in one of my favorite prints of hers, Hide n' Seek Original Watercolor Painting. It features lovely fall colors with a cat looking for a mouse in the pumpkin patch. I love the details and the fun of the painting. Amanda's motto is "Beauty can be found in the simplest things". She captures it in her work. I love her bookmarks. She was so kind so send me a bookmark to sample her artwork. My design is a Morning Lily in lovely yellows painted just for me. I am honored. It is too pretty to be slapped in a book.

Introducing Bonz 2 Chew - My Newest Blog


Bonz 2 Chew

I have done many stories and mentions of the small zoo I have in my home. With my love for animals I have always had multiple pets in my home since I was young. Some of you may remember the April Fool's Day joke I played where my dog Pepper took over One 2 Try. Changing blog name to Bone 2 chew. Well I had a lot of fun with that post and someone suggested it was a great idea for a new blog. It got me thinking and I have been working behind the scenes to bring it to life. Introducing Bonz 2 Chew!

My goal with Bonz 2 Chew is to bring pet information, animal stories and of course pet friendly products. Pepper will have her input with her four paw rating scale.

1 paw - ears up
2 paws - slight tail wag
3 paws - like a new toy excitement
4 paws - Full tailwaggin, jumping for joy, fun
