Lucy's Cookies - Giveaway (ends 7/10)


Do you know a loved one with food allergies? In my family, my nephew has a severe allergy to peanuts. We have worked very hard to make sure everything he eats is not exposed to or contains any peanuts. It is kind of sad when he can not have so many of the commercially made cookies. Read the label, you will find peanuts everywhere. Finally we have found a cookie we can feel safe about. Lucy's Cookies.

Dr. Lucy Gibney, a mother with a child who has food allergies, decided to do some serious research in her own kitchen. She set out to create tasty recipes for her child, that has grown into a delicious treat for those with special dietary concerns, as well as those without. Each of Lucy's cookies are made in a dedicated bakery to exclude allergens: gluten, milk, eggs, peanuts and tree nuts. What she created is a crispy delicious cookie with a light airy texture people love.

I love the flavors of Lucy's cookies. Sugar Cookie, Cinnamon Thin, Chocolate Chip and Oatmeal make up the delectable selection. The crunch of the cookies is amazing. The sugar cookies have a delightful sugar taste. They are made to be crunchy to the bite and they do not disappoint. I would love to dunk these morsels in coffee for a fantastic treat. The Cinnamon Thins are a wonderful snicker doodle taste. The cinnamon blends nicely and leaves a scrumptious cinnamon flavor lingering. Delicious! I enjoyed the oatmeal cookies. They have a buttery taste to me. I wish they had raisins inside though. For a plain oatmeal cookie, I found these very likable. My favorite of all the cookies is the Chocolate Chip. Of course because I would eat anything chocolate. I feel very confident that my nephew will enjoy eating these great tasting cookies. I am also confident we do not have to worry about giving these to him. Thank you Dr. Lucy for thinking of those with food allergies. What is great about Lucy's cookies, everyone will enjoy them. You do not have to have food allergies to enjoy them. They are delicious for all.

When I hear the word splits, I think of banana splits. Well here is a fun contest from Electrolux that helps in the research of Ovarian Cancer.

Kelly Ripa and Electrolux are joining forces once again to celebrate the launch of Electrolux Appliance's new stand-alone refrigerator and freezer - that's right, the familiar duo has split up. And to sweeten the celebration, they're bringing in the "Emperor of Ice Cream" Stephen Bruce, owner and founder of Serendipity 3, the landmark New York City restaurant and dessert spot, into the mix.


Kelly and Bruce teamed up earlier today to make banana splits for a cause. And now we want you to dig in, with your virtual spoon! There is no better way to descibe this incredibly fun cookbook! Bite me is written by Julie Albert and Lisa Gnat, two self proclaimed, not-so sweet, tiny-bit-salty sisters. With such a bold title, Bite me, I knew I was in for a sassy time and great recipes.

The saucy sisters share a deep love of food along with lots of fun! The collaboration of the two in Bite Me, makes eating and entertaining easy. Julie and Lisa compliment each other in what they do best. Julie does the computer work and Lisa shows her how to cook.

The recipes in Bite me are for the everyday cook. In here you will find 175 great tastes and easy meals to make for every taste. You will find the answer to "what's for dinner?" Classic yummy fantastically presented real recipes. Browsing through Bite me, I have found a smorgasbord of recipes screaming for my family to eat. Bite me is more than great foods, it is a lot of fun to read.

Take a gander at some of the categories:

Spoon Me - Soups
unDress me - Salads
Respect me - Vegetables
Fork me - Dessert.

Yes the book is sassy fun. Adding to the fun are many photos of the recipes and craziness shots (after all the title of the book is Bite me!) I enjoyed the little Bite Me Bits that are quotes of food wisdom placed throughout the book. One of my fave is - Did you know that "go hang a salami" and "I'm a lasagna hog" read the same spelled backwards? Interesting.

Back to the recipes. I am dying to make the Southwestern Chicken Corn Chowder made with creamed corn and corn kernels in a creamy cheese chowder. It sounds delish for a cold fall evening. For a salad - try the Appel Koolsla (apple coleslaw) made with granny smith apples 2 kinds of cabbage, cherries, mango and spiced pecans tossed in a vinegar dijon mustard dressing. Delish. I am making this coleslaw for my 4th of July famiy get together. My guys are meat lovers so I had to browse the beef recipes. H-Crusted Beef Tenderloin with lots of fresh herbs coating the beef, has them drooling. For something different - Sunshine Pineapple meatballs. Are you serious? They are sweet and sour meatballs made with a scrumptious pineapple sauce. These would be great for parties! It just would not be me if I left out dessert. I am salivating over the Indoor S'mores - a layered dessert with all the good ingredients of classic s'mores. Just get me a spoon and we are good to go!

Cocoa powder, bananas and walnuts make this bar an incredible dessert type of taste. Walnuts contain omega-3 fats, while bananas are natural energy boosters. I love the rich chocolate flavor. This is very good! My selection from the superfood category is the Tropical Sesame Cranberry bar. This was my favorite of all the bars I sampled. This bar is filled with sesame seeds, peanuts and cranberries. The nutty taste was a powerful explosion of rich flavors. I would buy more of the Tropical Sesame Cranberry bars. Each of the bars is a chewy bar with the added crunch of the ingredients. The soft chew makes the bars a joy to devour eat! I had the pleasure of sampling each of the Bora Bora all natural bars with my family, everyone really enjoyed the flavors and I have already been asked to purchase more. All of the bars are Gluten Free and most are Vegan. They also contain no refined sugar. The flavors are truly island scrumptious!

Today is National Creamy Praline Day!

A Praline is a confection made from nuts and sugar syrup. A really good praline is creamy and melts in your mouth. I am sure those of you cooks from the south have an incredible praline recipe. I have had a few delicious ones from New Orleans.

Take it all off Thursday! - Nutrisystem Update

I missed my update for Nutrisystem last week. I was on a mini family vacation. For those of you not familiar with my story, I have been on the Nutrisystem program for the last 17 weeks courtesy of Nutrisystem. Up to this date I have lost 17 pounds in my first 12 weeks. I am thrilled. Although I have reached a plateau of epic proportions. I have been at the same weight for the last 5 weeks. It is as if my body is at its perfect weight and won't let it go. The reason I say that is for many years, I was at this weight. It would not budge. No matter what I did it was the weight I was always at.

With the guidance of my Nutrisystem contact, she has suggested I try switching the meals around by eating dinner for lunch and lunch for dinner. I actually liked eating the larger meal at lunchtime. I hate eating heavy in the evening. I tried it and still no budging on the scale. I know I have been losing inches somewhere because my clothes fit different and I did buy a smaller size of clothes.

So what am I to do? Short of running a marathon, I have been trying to get more walking and exercise in. On vacation we walked a lot! I managed my foods choices very well on vacation too!

I have made a plan to take time out of each day to get myself to the gym. The weather is warming up and I love to swim so I will be jumping in my pool lots more too. I need to start doing more strength training or something to break through this cycle. I am so excited to have lost the 17 pounds and not gained any back! Not it is time to turn up the heat and move those extra pounds off!

The Nutrisystem program is a tool to help and it does work for me. I am the one that needs to take the tool and use it towards my weight loss goal. The meals are tasty, the program is easy to follow and it is giving me better nutrition. I am also going to try different vegetables and proteins to break the "my body is used to it" cycle. It is a little frustrating, but if I use the frustration towards motivation.....I can break this plateau.

United Cakes of America - Cookbook Review

July 4th is just around the corner. Lots of pride in our 50 great states can be seen in red, white and blue glory! Warren Brown, the very successful cake baker and author, decided to bring us culinary adventure of cakes made from every state. United Cakes of America: Recipes Celebrating Every State is an incredible tasty journey of our great tastes across the nation.

I adore this book. Each state is represented in short stories as well as recipes using those famed flavors of the region. I had to see what the cake is for my state, California and it is rather unusual. Avocado Cupcakes! It makes sense because we grow near 90 percent of all avocadoes produced in the U.S. (bet you did not know that). The recipe sounds pretty tasty made with cornmeal or grits with the avocado and lots of spices plus crunchy walnuts. I think I would try this recipe. Also from California, is Chiffon Cake which was created in 1927 in Los Angeles. Yum.

Kentucky - Kentucky Derby Cake
New York - Red Velvet Cake
Michigan - Chocolate Souerkraut Cake
Texas - Texas Sheet Cake

There are so many more wonderful taste treats from every part of our country. You will find official state desserts and unofficial favorites. Also included are Warren's creations based on the ingredients for the area. Some are cakes, cupcakes, pancakes and treats. All made with Warren's touch of CakeLove.

United Cakes of America is a joy to read and is filled with glorious photos. The format is easy to read and the recipes are clearly explained for easy of preparation. I have about 4 cakes on my must make this list for my 4th of July get together. Which one will I choose is the big question.

Here is a sample recipe courtesy of the publisher:

CONNECTICUT
Nutmeg Spice Cupcakes (or Hartford Election Cake Updated)

Yield: One 9-inch layer cake or 24 cupcakes
Dry ingredients:
8 ounces (1 cup) superfine granulated sugar
5 ounces (1 cup) all-purpose flour
1 tablespoon potato starch
1⁄8 teaspoon kosher salt
½ teaspoon nutmeg, freshly grated
Pinch of allspice
Pinch of salt
1⁄8 teaspoon baking soda

Wet ingredients:
3 ounces (6 tablespoons) butter, melted
¼ cup half-and-half
1 tablespoon rum
½ teaspoon vanilla extract
2 whole eggs
1 egg yolk

1. Preheat the oven to 325°F and place the rack in the middle position. Lightly coat a cupcake tray with nonstick oil-and-starch spray and line 10 of the cups with paper liners.

2. Measure and combine all the dry ingredients in a deep bowl. Whisk lightly for about 15 seconds to blend.

3. Combine all the wet ingredients in a container with a tight-fitting lid and shake well for 15 seconds.

4. Lightly whisk the wet ingredients into the dry ingredients. This should take about 15 seconds.

5. Scoop or pour 2 ounces of batter into the paper-lined cups. (Using a food scooper or ladle works best.)

6. Bake for 20 to 25 minutes, or until the tops of the cupcakes are golden brown and a wooden skewer inserted in the center of one comes out clean or with just a few crumbs.

7. Cool the cupcakes for five minutes before removing them from the tray. When they are room temperature, frost or decorate them with Old-Fashioned Milk Buttercream (recipe below).

Old-Fashioned Milk Buttercream

Yield: Enough for one 9-inch layer cake or 24 cupcakes

1 cup milk
2 ounces (¼ cup) all-purpose flour
8 ounces (2 sticks) unsalted butter
8 ounces (1 cup) superfine granulated sugar
Pinch of salt
2 teaspoons vanilla extract

1. Quickly whisk together 4 tablespoons of the milk with the flour. This slurry will be somewhat thick, so whisk thoroughly to make it smooth. Press out any lumps with a flexible spatula, if necessary.

2. Whisk in the rest of the milk and transfer the mixture to a 2-quart heavy-bottom saucepan. Bring to a simmer for about 30 seconds over medium heat, whisking the whole time.

3. Remove the pan from the stove and place plastic wrap directly against the milk’s surface. (This is the best method to prevent a skin from forming.) Cool to room temperature.

4. Combine the butter, sugar, salt, and vanilla in the bowl of a standing mixer fitted with the paddle attachment and mix at medium to high speed for 5 minutes.

5. Pour the cooled milk-and-flour mixture into the bowl and beat for another 5 minutes, or longer, as needed to achieve a spreadable consistency.

Today is National Chocolate Eclair Day!

Love them. Those delicious puffs of dough filled with cream then covered with a chocolate glaze known as Chocolate Eclairs. Well today is National Chocolate Eclair Day! I have never tried to make my own. I have made cream puffs so it is pretty similar. In looking for recipes I found some pretty delicious looking ones.

The Culinary Institute of America - has a classic Chocolate Eclairs recipe.

From All Recipes dot com - I found Chocolate Eclair Dessert: a no bake dessert made with graham crackers and vanilla pudding mix.

Featured on Cd Kitchen are a few decadent sounding recipes for Chocolate Eclairs including a Cappuccino Eclairs recipe. Yum!

Do you have family traditions? I have a few that have been passed down from my grandmother. They have become a loving seasonal tradition and to this day I still carry out the enjoyment. One of my favorites, my grandmother always made home made popcorn balls and strung them on a wreath by the front door at Christmas. On the way out, we always grabbed one for the ride home. Decorating for Spring after spring cleaning of course, in gorgeous pastels. The recipes for spring include fresh vegetables, pork dishes and a scrumptious looking Coconut Cream Pie.

Focusing on Summer means simplicity and taking time out to travel. Enjoy where ever your day takes you. Recipes here include salad recipes, light pastas and incredible drinks. Fall is my favorite tradition time of year. I look forward to the fall holidays of Halloween, then transitioning into Thanksgiving. The colors of fall allow an abundance of decorating ideas. Rosanna includes many of her favorite recipes for Thanksgiving. She even shares her Mother's Apple Dumplings recipe and it looks very tasty. Winter is filled with family recipes from cookies to rich family dinners. In browsing the pages of Coming Home, I felt like I was part of the family! I enjoyed this book cover to cover and plan on making quite a few recipes.
